Description:
• EVOO (Extra Virgin Olive Oil) is the natural oily juice obtained traditionally from healthy, handpicked olives still on the tree. It is a highly nutritious and healthy food for the body.

• PDO: Protected Designation of Origin – Siurana

• FARMING: Certified Organic and Biodynamic (Compost). Sustainable olive grove, negative CO₂ carbon footprint, low water usage.

• CLIMATE: Mediterranean – mild winters, very hot summers, low rainfall
• 2023 HARVEST: Hand-picked during the first half of October. Ripeness index: 1–2 (veraison stage), when the olive skin turns from green to yellow and the pulp remains white. This is when the olive reaches peak concentrations of oleic acid, maslinic acid, vitamin E, antioxidants, polyphenols, tocopherols, etc.
• PRODUCTION: Two-phase mill, followed by decantation and filtration before cellaring.
• CELLAR: Controlled humidity and temperature.
• BOTTLING: On demand
• TASTING NOTES: Green fruitiness with vegetal notes of tomato plant, artichoke, fennel, banana, walnut, and green almond on the nose. On the palate, it develops further with fresh fruit flavours. A smooth, fresh mouthfeel with no astringency and a mild peppery aftertaste. Notable for its finesse and elegance on the nose and its richness on the palate, giving it a unique personality.
• PAIRING: Best used raw – ideal for salads, vegetables, meat, and fish. Also great for desserts, cakes, and ice cream.
